Zucchini and Tuna

Hey all!

I know it has been awhile. I really have no excuse as to why I have been absent. I just have not felt like writing. I guess you can call it laziness. However, today I did feel like sharing :)

Lately, I have been going to the gym as usual. I have gotten stronger and leaner, but still working on shedding this stubborn belly fat. I also picked up a new hobby which I will share with you later. I took a break with the potty training because miss Faith was not interested anymore, but she is ready to start again. I am still trying new recipes like the one I will share today.

A week ago I bought some zucchinis and just planned on sauteing them with onions like I usually do. However, I really wanted to try something new so I turned to my favorite recipe inspiration place, Pinterest. While browsing through zucchini recipes I saw a recipe of tuna and zucchinis and decided to go with that. I briefly looked at the recipe, but did my own version as I usually do. This is a great alternative to a tuna sandwich for anyone looking to go low carb or add more veggies into your diet.

Zucchini Tuna "Sandwich" 
Ingredients
Zucchini (2-3)
1 can of tuna (I use chunk light in water"
1/2 small onion chopped
2T Hummus
1/4 tsp each of black pepper, garlic powder, onion powder, and cayenne pepper
dash of salt, pepper and olive oil

Recipe
1. Preheat oven to 350F
2. Wash zucchinis and slice them in half

3. Scoop out insides of zucchini and drizzle with olive oil, salt & pepper

4. Place zucchini in oven and let roast for 15-20 minutes
5. While zucchini is roasting prepare tuna
6. Open can of tuna and place in a bowl
7. Add chopped onions, hummus, black pepper, garlic powder, and cayenne pepper and mix well

8. Once zucchini is done, fill zucchini with tuna (can sprinkle with Parmesan cheese if you want)

9. Place zucchini back in oven and broil for 3-5 minutes
10. Enjoy!
