Honey-Soy Chicken

Hey guys!

I hope everyone has been having a great week! I have been extra busy and feel like I barely have time to just relax. I was getting a bit overwhelmed with my long days and feeling worn out especially today, but God just knows how to send the right music, messages, and people to turn a cloudy day into a sunny one :)

So I have entered week 5 of my fitness journey, tomorrow will actually mark one month since I began. I am proud to say that I am still going strong. I have yet to miss a gym day. Of course, there are some mornings I would rather sleep in, but I keep reminding myself not to give up and that God will give me the strength as long as I stay focused and committed.I have still been sticking to my diet and eating lots of protein, veggies, fruit and drinking lots of water. Sometimes I do not want to drink soo much water since I'm always running to the restroom, but it's a good thing!

Today, I want to share a recipe with you all. It's been a while since I shared a recipe and this one you're going to enjoy. I was on Pinterest, of course, looking for a new chicken recipe to try. I came across a honey soy chicken recipe and I knew that would be the one to try. I made it about 3 weeks ago and it was such a hit (hubby and Faith loved it) so I had to make it again last week. The second time I made it, I cooked it in the crock pot because I didn't take the chicken out in time to marinate it overnight. All I can say is that I will never make that mistake again. I don't know if it was the crockpot or the fact that I did not marinate the chicken. Either way, if you follow the instructions you will really enjoy the chicken.

Honey Soy Baked Chicken Drumsticks [Adapted from She Wears Many Hats]

I paired it with homemade mashed potatoes
and roasted broccoli & asparagus
Ingredients
3 T olive oil [i used coconut oil]
3 T soy sauce [i used sodium free]
5 T honey [i used raw organic]
4 cloves garlic; minced
1/2 t ground ginger
1/2 t gorund pepper
3 lbs chicken 
salt and pepper to taste [i didn't measure here, i actually had my husband marinate the chicken so I do not know what he used or how much of each spice he used, feel free to experiment]

Instructions
1. Preheat oven to 425°F.

2. Mix first 6 ingredients together in a large plastic zip-top storage bag. Add salt and pepper to taste. Add the chicken to plastic bag making sure to coat each piece.

3. Place chicken in baking dish along with sauce/marinade or leave in large plastic bag to marinate in the refrigerator.

4. When ready to cook, in a baking dish, bake chicken in a 425° oven for 25 minutes with the skin side up. *Flip the chicken and cook skin side down for another 10 minutes. Then turn the chicken again to skin side up and finish cooking for another 10 minutes to crisp up the skin. Cook until internal temperature of chicken reads 165°F.
